In 7 Card Stud, 7 Card Stud Hi-Lo and Razz poker it is possible to run out of cards. Online poker rooms offer 8 seat ring tables for the 3 Stud poker variants so in the rare event that all 8 players stay in the entire hand there will not be enough cards. This problem occurs after 6th street when 48 cards have already been played and only 4 remain. At home games have heard of different ways to handle running out of cards in Stud but online poker rooms use the traditional solution. Since there are not enough cards to deal each player their final hole card the dealer will place a faceup card in the center of the table. This card is a community card and will act as the 7th card for each player in the hand. Each player in the hand can use this community card along with their 6 cards (2 hole cards & 4 upcards) to make the best 5 card hand.

The average real money Stud poker player has likely never been in the situation of running out of cards. This is because the odds of all 8 players saying in the hand til 7th street are extremely remote. Perhaps at the micro-stakes tables it may happen every once in a great while. I would imagine that it happens at the play money tables quite often but hand selection isn't really important to those players.
